TERROIR
Our grapes ripen at an altitude of between 350 and 500 meters above sea level, on clay-limestone soils, bathed in Mediterranean sunshine and cooled by the Pyrenees. This unique dual influence, specific to the Aude Valley, gives them their delicate aroma.
WINE MAKING
The grape varieties are vinified separately and transferred to vats by gravity. Maceration is accompanied by short pumping over, allowing a fruity aromatic palette and silky tannins to be extracted.
The fermentation temperature is controlled so as not to exceed 25 degrees. Devatting is decided upon after tasting the vats. Aging continues in vats for several months. The wines from the different grape varieties are blended in April.
TASTING AND PAIRINGS
Its garnet color is bright. Its different grape varieties give it an aromatic style combining fruitiness and delicate spicy notes (fresh pepper, cinnamon). The palate is full-bodied and balanced. It is a red wine with a decidedly fresh style.
