TERROIR

Our Chardonnay and Chenin grapes ripen at an altitude of between 350 and 500 meters above sea level, on clay-limestone soils. They were planted between 1972 and 2000.
Between the Mediterranean sun and the coolness of the Pyrenees. This unique dual influence, specific to the Aude Valley, allows them to develop a delicate aroma.

WINE MAKING

The grapes are harvested manually and loaded into the press by gravity. Pressing is a long and slow process in order to preserve the integrity and aroma of the grapes.
After settling, alcoholic and malolactic fermentation (partial or complete depending on the vintage) takes place in barrels (5% of which are new). Aging on fine lees continues until June following the harvest. Aging and bottling are optimized to reduce total SO2.

TASTING AND PAIRINGS

A clear, golden color with delicate floral aromas marked by notes of honeysuckle and citrus.
This is a fruity, balanced wine with a fresh, elegant finish.
