TERROIR
Our grapes ripen at an altitude of between 350 and 500 meters above sea level, on clay-limestone soils, bathed in Mediterranean sunshine and cooled by the Pyrenees. This unique dual influence, specific to the Aude Valley, gives them their delicate aroma.
WINE MAKING
The pressing cycle is long in order to gently extract the aromas, then the juice is settled and clarified at low temperature in stainless steel vats. Fermentation takes place at a controlled temperature (64°F). Malolactic fermentation and aging on lees take place in stainless steel vats until February.
TASTING AND PAIRINGS
Its color is clear and a beautiful bright yellow with green highlights. On tasting, it reveals fruity and floral notes on the nose, while on the palate it is balanced and structured but still fresh with pronounced citrus notes.
